The summer season sees us craving lighter dishes, full of flavour, mirroring that we’d expect to indulge in while holidaying in the Mediterranean. It’s time to say goodbye to heavy roasts and those spring stews and hello to exotic salads, vibrant ingredients and lighter bites.
When it comes to early summer vegetables it’s time to embrace the courgette, radish and cavolo nero. The sweet crunch of carrots also make a welcome addition to your June recipes, as do more exciting ingredients like fennel, artichokes and kohl rabi.
Of course, the start of the summer season wouldn’t be complete without a light salad. Lamb’s lettuce in particular is good for this season and adds interest to your dish with its distinctive and tangy flavour.
The June dish is also all about those little extras – we’re talking about herbs and leaves that add all that much-loved flavour and make a great replacement for winter spices. Mint, oregano, parsley, sage, sorrel and tarragon are all worth experimenting with and can make a huge difference to a relatively ordinary dish.
Of course, with the summer sun out and encouraging plant growth there’s also an abundance of fruit to enjoy. Watermelon, strawberries and cherries are our favourites and great to enjoy post- dinner or in a refreshing mid-morning smoothie.
While meat and poultry is still very much enjoyed by many in the summer it’s really the best time for seafood. Sea bass, trout, and mackerel all come into season around June and bring with them tons of flavour and health benefits. Easy to season and great for that summer barbecue, it’s well worth swapping that beef burger for a piece of succulent, grilled fish. There really is no better time to enjoy it!

For Paula and Stephen, passionate food lovers, the kitchen has always been the heart of their home.
After years of imagining the potential hidden within their awkward layout, they finally decided to transform the space into something truly special.
From the first meeting in the showroom with Lauren, a strong sense of trust was established. Working closely throughout the design process, the vision evolved collaboratively, ensuring every decision reflected both practicality and personality, carefully balancing aesthetics with everyday functionality.
This project required a dramatic structural reconfiguration, with two walls removed to open the kitchen and improve the overall flow of the ground floor. The results have completely reshaped the space, creating a cohesive, light-filled, flowing open-plan environment that feels both expansive and welcoming.
